

The babka or bobka (Polish old woman or grandmother) is a cake native to Eastern Europe.
It looks like Alsatian kouglof. The recipe is still relevant in Poland and in the Polish diaspora, especially in New York and Montreal.
This is a brioche filled with a chocolate preparation and topped with a crisp streusel. As much as you say that level texture we take the taste buds.
